We pour five wines from the cellar by the glass using a Coravin: a 2000 Pauillac, Château d’Yquem, a Brunello Riserva, a Premier Cru Chablis and a red Burgundy. You can order a single glass without buying the bottle.

How a Coravin works.
A Coravin pours wine through a thin needle inserted through the cork. Argon replaces the wine as it is poured, so no air reaches what is left in the bottle. When the needle is removed, the cork reseals.
An opened bottle starts to fade within a day or two, which is why wines like these are usually sold only by the bottle. With the cork left in, the rest of the bottle keeps for weeks.

No need to ask ahead; order it like any other glass. If you would like help choosing, ask your server. The Chablis pairs well with the crudo and the ceviche, and the reds with the wagyu tartare and the Ibérico ham. Every wine here is also available by the bottle.
